Commercial Kitchen Exhaust Restoration
Commercial kitchen exhaust restoration is required when a system has been neglected or improperly maintained and routine maintenance cleaning is no longer sufficient.
As grease remains inside a kitchen exhaust system, the heat from daily cooking operations repeatedly cooks the grease. Over time, this causes the grease to harden and turn into carbon. Carbon buildup becomes dense and almost rock-like and cannot be removed with degreasers and pressure washing alone (NFPA 96’, Sections 3.3.39 and 11.6).
In severely neglected systems, liquid grease may also accumulate within the ductwork and exhaust fan. As the fan operates, this grease can be blown outward, leaking onto rooftops and adjacent building surfaces, contributing to roof damage and costly repairs (NFPA 96’, Section 8.3.5).
Restoration involves extensive manual scraping by hand, followed by degreasing and pressure washing (NFPA 96’, Section 11.6).
